The One, The Only – Avgolemono

Avgolemono is a popular Greek soup that is made with chicken broth, rice, and eggs. The name Avgolemono comes from the Greek words “avgo” meaning egg and “lemoni” meaning lemon. This is because the soup is thickened with a mixture of eggs and lemon juice.

While we don’t want to brag, the soup here at Bentley’s is incomparable. However, for the days you can’t stop in – this one is pretty good, too.

What to gather.

Like any recipe, the beginning starts with the right ingredients. For this one, remember that quality is key to obtaining the best flavor. And don’t worry; you won’t have to spend a lot because the list is simple!

  • 4 cups chicken broth
  • 1/2 cup uncooked long-grain rice
  • 3 eggs
  • 1/4 cup lemon juice
  • Salt and pepper to taste

  1. In a medium saucepan, bring the chicken broth to a boil. Add the rice and stir well. Reduce the heat to low and simmer for 18-20 minutes or until the rice is tender.
  2. Whisk together the eggs and lemon juice in a small bowl until well blended.
  3. Slowly pour about a cup of the hot broth into the egg mixture while whisking constantly. This will temper the eggs and prevent them from scrambling.
  4. Slowly pour the egg and lemon mixture into the saucepan with the remaining broth and rice. Stir well.
  5. Cook the soup over low heat for an additional 2-3 minutes or until it thickens. Be sure to stir constantly to prevent the eggs from scrambling.
  6. Remove from heat and season with salt and pepper to taste.

Just one more step.

Avgolemono is typically served as a main course and is best served warm. It can be garnished with chopped parsley or dill for added flavor. This soup is a perfect comfort food for cold winter days. It’s also a great way to use leftover chicken or turkey.
