What’s a jojo?

Simply, the jojo is a thickly cut potato wedge, seasoned, deep-fried, and served with your favorite dipping sauce – mainly ketchup. So, yes, the jojo is a version of the french fry, but way bigger and more flavorful.

Like most foods, JoJo’s have a history.

When looking back in history, many stories give origin to the jojo to mid and Pacific northwest regions. However, like most food items, a few stories are floating around concerning the first jojo. One story begins with a company known as Flavor-Crisp.

Flavor-Crisp trademarked its version of the deep pressure fryer in the 1960s. While the design was created with fried chicken in mind, a local Idaho potato salesman threw a few potato wedges into the fryer to “clean the grease” between chicken batches at an expo. One batch missed the trash and remained on the table. The rest is history.

Of course, there are always more tales. A second, and very similar story, revolves around the Nicewonger Company of Vancouver, Washington. Which is accurate, and who gets the credit? We may never know. Either way, we have the jojo, and life is good.

 

But, what is so good about the jojo?

While the answer to this question lies with the chef, jojos tend to contain similar traits. Traditionally, a jojo is made from a thickly sliced potato wedge (some cook the potato first, some don’t), dip it in a batter/breaded mixture and deep-fry. The combination of added spices takes the jojo to the next level, differentiating it from the everyday fry or wedge.
