Not that it happens often, but when it does, we put those portions to good use!

 

Cubed versus ground

When it comes to chili, preference is everything. Although most classic recipes call for ground beef, utilizing your leftover roast beef will prove to be just as, if not more, delicious. With the proper preparation of sauce, your beef will be enabled to further tenderize and gain even more flavor than it may already have.

When cooking chili, the main difference between the two textures of beef is preparation. Because your cubed beef has already been prepared, you’ll add it to the main recipes later on. Think of the beef as another ingredient. However, if you prefer ground beef, you’ll want to cook your meat first. After browning is completed, you’ll add ingredients to the meat mixture.

 

Not too shabby recipe

Although we’re not going to give away our secrets, we’d like to share a pretty darn good recipe for you to try at home.

  • 1 pound leftover roast beef, cubed
  • 2 garlic cloves chopped
  • 1 sweet onion, diced
  • 1 green pepper, chopped
  • 2 tablespoons of chili powder
  • 1 teaspoon of ground cumin
  • 1 8 oz. can of tomato paste
  • 1 28 oz. can of roasted diced tomatoes, undrained
  • 2 cups of water
  • 1 15 oz. can of kidney beans, rinsed
  • 1 15 oz. can of chili beans, undrained
  • Salt and pepper to taste

 

Over medium heat, sauté your onion in olive oil. Add garlic, tomatoes, beans, water, and seasonings. Mix thoroughly. Bring your mixture to a boil, reduce heat, and add your beef. Simmer for one hour.

 

The extras make everything better

Even though this chili is impressive on its own, the little extras are where it’s at. For example, if you have a picky eater on your hands, a handful of tortilla chips may be your saving grace. Replacing the traditional spoon with chips is not only fun, but it will also have your little ones gobbling up dinner with no complaints. Further additions could include shredded cheese, sour cream, and chopped chives or jalapeños.
